Think about it. You get trapped overnight hanging from a tree. Someone cuts you down, then they shoot you. They drag you to a place you've never seen before; you didn't even know there were buildings on this island in the first place, much less other people. Then you get tortured and interrogated about who you are.
OR, he's with the Others, but his story could still be partially true...he could have a wife and they could've crashed there and been brought in on the plot because they're "good people", as Goodwin would say.
So why in this situation, would you tell your interrogator that your wife is alive and well back in your cave? Would you risk that he'd force you to go there and maybe have her interrogated too? If he doesn't believe you, why would he believe her?
If this is true, and Jennifer Murphy/Gale isn't really dead (but possibly sick), I see two parallels between Sayid's story and Gale's story:
1) In this past episode, Sayid lied about who his superior officer was due to his loyalty, and for his commander's safety. Gale lied about his wife for the same reasons.
2) When Sayid was captured by Danielle last season in "Solitary", he told her that Nadia was "dead because of me". We've clearly seen that she isn't. In the same episode Sayid let her escape, and in his next episode we see that she's living in Los Angeles, which is why Sayid was on the plane in the first place. Sayid lied to Danielle to gain her sympathy, which worked.
So Henry gets captured, shot, and dragged to a bunker, and a very paranoid man starts asking who he is. So when he reveals that he lives in a cave, instead of saying his wife is alive there, he protects her by saying she's dead. Otherwise for all he knows, Sayid might find the cave and go after her. He also tried to gain sympathy with Sayid, but failed because he was lying. He didn't "remember" burying his wife, because he didn't bury her.
That could also explain the look Gale gave Sayid at the end...he wants to get back to his wife, but he can't tell Sayid that.
I think this is an intentional parallel by the writers. Either to show that Gale is innocent like Sayid was, or to make us think that he's innocent like Sayid was even if he's not.
