Clearly, there has to be some reason that Hurley said that. I'm guessing it's one of the following:
1) Dentist skills will come in handy at one point on the island. No idea how. After all, there's no candy on the island except those Apollo bars, so I doubt anyone will be getting cavities.
2) It was an inside joke to clear up the deleted scene with Claire and the pilot in which he tells her that his wife ran off with a computer programmer named Bernard.
3) One of the writers has a dentist named Bernard and promised him a shout-out in exchange for getting his teeth cleaned for free.
As far as # 2 - Wouldn't that go further in explaining why it was deleted? Writers change their minds. Pesky writers...you *children of unwed mothers* must never change your minds, don't you know the universe implodes everytime you do...there I said it...you are each personally responsible for the creation and simultaneous destruction of all existence. I hope you are happy with yourselves.

Maybe he was just trying to make conversation, Sayid isn't the friendliest of the lostaways.
Yeah, especially now that Sayid is still grieving pretty intensely. But i think the fact that Bernard's profession was brought up wasn't for nothing. I'm not implying it's some huge plot point or anything, but I bet it will come up again. I would love to see a Rose and/or Bernard flashback episode.
