That alone was enough to make Sawyer ask for more details that would eventually make him realize that he met Jack's old man in a bar. Just because a random throwaway line some guy in a bar said.
This week, the guy who just revealed himself to be Locke's father mentioned the word "con", and Sawyer instantly gets the idea that Cooper might be The Real Sawyer.
Seems pretty odd to me especially since Sawyer usually shares the other characters' habit of Never Asking Any Questions.
"That's why the sox will never win the series" was not a common phrase, and having two people say it in such a short time time would make me suspicious as well. As for the Cooper issue, Locke lies to him and tells him that he has Ben hostage, then locks him in a room with some strange guy. He already suspicious at this point. Then the guy tells him that he's a con artist who has held many aliases. That's not a big leap for him to make, especially when he's been so obsessed with the issue that he keeps the letter to Sawyer in his pocket.

Actually it's not odd. Locke had been prepping Sawyer the entire walk to the ship by asking specific questions in a specific order...
"The file didn't say WHY your dad killed himself and your mom.... It also didn't say WHY you go by Sawyer...."
Sawyer was already suspsicious. Also, as a con his main skills involve paying attention to key things people say and then using them to his advantage. He's a great con man and he will be very aware when he is getting conned by someone else. He's already wary of Locke and Locke's line of questions were designed to make Sawyer suspicious.
And Locke told him basically that he would want to kill the guy after hearing what the guy had to say. There was only one guy Sawyer really wanted to kill, the con man.
I don't think I'd say that Sawyer was jumping to "odd" conclusions, when on both of your examples he made the right conclusion.
Sawyer's a smart guy and he appears to be rather intuitive when it comes to the people he knows well. Remember how quickly he was able to figure out that Kate had used him b/c she was upset/jealous with Jack?
So what's gonna happen with Sawyer's story now? Are they going to kill him off because that's pretty much wrapped up now, that's the only reason Sawyer wanted to get off the island, he said this in Exodus Part 1, so are we ever going to get a Sawyer flashback ever again?
I guess you could say the same thing about Locke, but he still has an important role to play, his connection with the island, Sawyer doesn't have that, i guess we'll just be seeing him kick *** on-island in future then.

I don't think he'll die, and I don't think he's "wrapped up" his storyline - after all, on the island, we've seen Locke and Hurley give him a new one - Hurley showed him that he can lead, and likes being a leader, and Locke handed him the tape recorder - it's Sawyer's new purpose to bring that back to the beach, rejoin "society" after what he's done, and play an opposing figure to Jack.
I also don't think Sawyer's ever jumped to an odd conclusion - he's a quick one, and almost always able to read between the lines.
Now, the other thing is that Sawyer is currently the one with the best knowledge of "odd character connections". He knows he met Jack's old man, and he knows that Locke's dad was his nemesis. Will this be enough for him to try and investigate more on how he and his fellow castaways are connected to each other?
Didn't all of us notice instantly when Jack used the Red Sox line? Didn't we all speculate that Cooper was the real Sawyer after he talked about a con, last season? Sawyer's as smart as a TV fan, at least.

We're all aware it's a TV show where weird character connections are all over the place, though.
